Fava Beans and Chicory
Ingredients for 4 people:
- 1 lb of chicory
- 1 lb of dried and peeled fava beans
- 1 gallon of water
- 1.5 Tbsp of salt
- 1 Tbsp of EVOO
- 4 slices of bread
Directions:
- Soak the fava beans overnight
- Bring the water with salt to a boil and add the chicory
- When cooked drain the chicory and set it aside, keeping the water to use for cooking the fava beans
- Cook the fava beans until they fall apart and the consistency resembles mashed potatoes (use a fork if you need to reach a thick consistency, not runny)
- Toast the slices of bread
- Serve chicory and fava beans on a plate (see picture)
- Drizzle with EVOO and serve with bread
