Insalata Russa (Russian Salad)
By a Piedmontese Nonna near Lake Orta in Piedmont.
You might enjoy this recipe on our tours in Piedmont! We collected this recipe from a kind nonna that we met in a bar in 2014 near Lake Orta in Piedmont.
Ingredients for 4 people:
- 3 potatoes
- 4 carrots
- 1 can of peas Boil potatoes with skin
Directions:
- Boil potatoes with skin. Let cool off, then peel and dice
- Peel and dice carrots, then boil them
Mix potatoes, carrots and peas with mayonnaise **

** Ingredients for mayonnaise:
- 2 eggs at room temperature
- EVOO
- 2 tsp of mustard
- pinch of salt
- 1/2 lemon
Directions:
- Separate egg yolks from whites (used them for something else such as merengue or a cake or frittata)
- Stir gently the egg yolks with a spoon in the same direction, while slowly pouring EVOO
- When eggs start to bind, add a pinch of salt and keep stirring until the mixture is enough thick
- Add lemon juice in small amount and keep adding EVOO while stirring until you reach desired amount
- Add mustard and adjust the flavor depending on your preferences
