Grazia uses her homegrown almonds to make this healthy beverage! You might enjoy this recipe on our tours in Sicily or in other regions in south of Italy where this beverage is popular, given the local almond production.

Ingredients for ~1 liter (~1/4 gallon) of almond milk:

  • 200 grams of raw almonds 
  • 1.5 liter (~0.4 gallons) of water
  • 100 grams of sugar (we used none)

Directions:

  • Soak almonds in 0.5 liters (0.125 gallons) of water for at least an hour or even overnight (this will help reach a better final consistency)
  • Toss the water and peel almonds 
  • In a food processor blend the peeled almonds with a new 0.5 liter (0.125 gallons) batch of water
  • If you like add sugar (or honey) or not as we did, just to keep it more natural
  • Add the remaining 0.5 liters of water and continue blending
  • Strain the almond milk through a cheesecloth or flour sifter or similar
  • We suggest not to discard the almond pulp and use it for smoothies, cookies, and other recipes
  • Store almond milk in the fridge

This yummy and healthy beverage can last for 4 days or so in the fridge and in Sicily is usually enjoyed cold as a thirst quencher.

This dish celebrates the #nowaste concept in the kitchen (dry bread can become bread crumbs as in this recipe). This picture features the 4th largest city in Italy (~850.000 inhabitants like San Francisco) and the snowy Alps in the distance, the local natural barrier very close to the city (~60mi away and ~13,000ft high). Maybe this is the reason why Romans in the 1st century BC thought that this was a convenient place to found a new village, in addition of being located next to 3 rivers and protected by hills on the other side. In the picture you can also admire the 550-feet-high Mole (called like this because of its mass...”mole” in Italian), the monument that represents the city also visible in the back of a 2 euro cent coin. When it was finished in 1867 was the world’s tallest brick building....not anymore but this is another story! #stories #Italy #Piedmont #travel

Here in #amalfi the Aceto family mixes passion with tradition while sharing inspiring stories with the curious travelers who visit their “garden” as they like to call their farm in the steep slopes of this corner of @unesco site of #costieraamalfitana Unforgettable for us today not only to taste the homemade #limoncello lemon cake and lemonade but also to learn that the family uses lemon peel with honey against headache, lemon rubbed on skin against mosquitos and as disinfectant for skin wounds. Here the local representative Virginia shared with us a lot about the healthy qualities of ancient grains such as #senatorecappelli variety (less gluten content then industrial flour and less need of pesticides in addition of lower yield) and the different techniques of making dried pasta as they do here: between 3-6 days (depending on size) of drying process at less then 100F (to keep nutritive qualities and not alterate the proteins in glutin) and extrusion in bronze dies for a superior quality and better sauce pairing, given the rougher texture #stories #food #italy #fstpastaitaly #handsfacesitaly
